Potato and mushroom duxelles croquettes with chipotle apple honey and green apple crisp brunoise and micro greens

Pan-seared Atlantic salmon with lemon caper beurre blanc and parsnip purée garnished with crispy salmon skin and pea tendrils
Bianchi pinot noir braised short rib on crispy onion bloom dressed scratch-made chimichurri

Citrus-soaked tres leches cake topped with coconut cream mascarpone rosettes and garnished with dried edible florals and citrus zest
